Cooked some filet from Costco last night. EVOO and Charlie Palmers dry rub.

Theses where north of 2" so I decided to sear on all sides.

After sear I pulled them to rest for 20 min as the BGE got down to temperature. I took these to 140*.

While they rested for 10 min or so I decided to grill some romaine. Oh man was that good. Brushed lightly with EVOO and peppered. Flavor was amazing

Oh wow that looks beautiful!! Perfect grill marks, doneness and everything. The grilled romaine is the perfect accompaniment too. I like it with a drizzle of Caesar dressing and some Shaved Parmesan, since beef and Caesar salad go together so well. A lot of people think grilling lettuce is nuts....until they taste it.
 
Thanks guys. Caesar would have been better than the Balsamic I used but I didn't have any on hand.

I've decided I'm going to grill everything, haha
 
Tasty steaks look tasty! We found a basalmic reduction that's tasty on steak and salad. It's called Fig and Fire. Great mix of sweet and heat!
