I am planning to to a small (2.5LB) piece of Brisket tomorrow on my SI #3. I will be serving beans with it. Here's my thought, I am going to put the beans on the rack under the brisket to catch the drippings. I will defat the beans when I take them out.

The reason for this post is to get any hints that might help having not done this before.

Thanks in advance!!

My personal opinion is I wouldn't do that.  Not sure I'd want "not fully cooked" juices rendering into my beans.  Now if I misunderstood and you will be putting them in the last hour or so then it should be fine.  I still wouldn't do it cause I don't want greasy beans.  Gonna be hard to de-fat them.

Suggestion.  Catch the drippings and de-fat those and add to taste.  That way you can control the amount of added flavor.  You want a hint of taste from the brisket you don't want it to overpower the great baked beans.

I agree with what Scott says and for the reasons stated. Admittedly you are not fixing a large brisket but the initial raw juice runoff may not be overly healthy.  Separate pan for the juices.

Appreciate the reply. I'll catch the drippings separately. My plan was to put beans in for the entire cook but that may be too much time. Brisket is mini-me (2.5lbs).

As always, I can count on the answers to questions here. Will smoke beans and add drippings after.

Thank you all very much!
