Aunt Saraâ€[emoji]8482[/emoji]s Dutch Lettuce

(Bacon Based Sweet and Sour Dressing)

1 Head of Lettuce - shredded
4 Strips of Bacon - cut into ¼ inch dice (Use Kitchen Shears)
¼-Cup Vinegar
½-Cup Sugar
3 Eggs
2/3-Cup Water

Brown diced bacon in a cast iron pan over medium heat – remove from heat
In a small bowl whisk eggs, vinegar, sugar, and water
After pan with bacon has cooled slightly add egg mixture and whisk slowly to combine
Return pan to medium-low heat and stir slowly – mixture will bubble and thicken – continue to desired consistency – remove from heat

Two options at this point

For a wilted salad, add dressing to lettuce while hot – mix well

For a crisp salad, cool dressing and add to chilled lettuce – mix well
 
Don't know how I missed this when you posted it, but it looks great! I'm wondering if a bit o' mayo and maybe some cold peas would be good in there as well! Sprinkle a bit of sharp chedder on top, just for kicks.
