Just picked up a 16.5lb pork shoulder for Monday...looks like I'll be putting it on Sunday morning.
I think you might find 2 in that package.
The thought has crossed my mind but I couldn't squeeze it apart and only felt one bone. Maybe one in bone and one boneless? I'll know tomorrow.
Bear is right. You will find two bone in butts in that pac. No problem though they will have the same cooking time when you smoke them together. Reinhard
They will still take 16.5 x 1-1.5 hrs? Or should I figure about 8 x 1-1.5 hrs? Thanks guys.
Since they are separate, use the 8lb calculation + a few hours for unexpected stalls. I've had 8 pounders take over 16 hours while others kept to the forumula. I also don't foil.
Don't be surprised if your two butts take longer. My last two took 20 hours to hit an IT of 205* Both were just under 9 pounds. The weather that day was pretty crummy. I ran my smoker at 265* the whole time. I don't foil, spritz, or any of that other stuff. I usually figure 2-2.5 hours per pound, especially if I am cooking for the same day meal, which I rarely do with pulled pork. It re-heats so well I don't feel one needs to do that. Plus if you're using a finishing sauce it gives the pork time to meld!
