Memorial Weekend Cured and Smoked Chickens

    Time to get ready for a party at J.R.'s;  taking 4 cured and smoked chickens and a pasta salad as our donations.  There should be 12 or more of us to enjoy the day on Sunday!   Monday is for our individual respects we pay.

    Bought 4 chickens at Kroger on Sunday after the flag football game we watched in Mansfield; our grandson Trey (age 4) played in it, it was their last game and they won it and won the championship!


    (any chance to show off a grandchild, y'know?!)

    I digress.  Got the chickens home and the next day made up 2 gallons of brine and cured them, leaving them in a 5 gal. bucket in the back fridge until Friday morning.  Started up the smokehouse and brought them out, sacked them in stockinette and hung them in the smokehouse and got them smoking at 240°;


    More to follow - probably a 4pm Qview or so, showing off their color.

    Congradulations due for Trey's team on the big win!!! i'll be waiting for the results of the smoked birds.  Do you take the birds out of the brine and rinse them and then net and smoke them right away or do you rinse them and let them sit in the fridge overnight before you smoke them? Thanks. Reinhard

    Took them straight from the fridge, rinsed, into the sacks and straight to the smokehouse, which I'd already ignited and had up to 240°.  With poultry, no time to waste!  The faster I can get them from cold to cooked the better!  


    They're at 142º at 4:15pm; probably another 2 hours to finish at 160°.

    It was their first Team experience for many of them; they were ages 3 - 6, and everyone was thrilled to participate!  There were 4 teams and every one of them got trophies for participating, it was a wonderful program J.R. enrolled him in and he got to really play flag football, which he watches the Cowboy's games on TV with J.R. as well as at the stadium (J.R. has season tickets)!  He learned some of the basics of the game!  It was great!

    Thank you, Stan!

    They finished at 5:45, all at 155° or higher.  Took them out:


    Got them unsacked and put in a lug:


    to await getting cut up and grilled on J.R.'s grill - love cured and smoked chicken on the grill! (skin removed!) - like ham on the grill!  A true delicacy!

    Tough day for me today.

    It was they last time I saw Mom living..1999

    Spent the day with her at hospice...

    She passed that nite..

    Yup, every day is a blessing!

    My mom was in the hosp. and passed in Nov. of '93, I too spent the night with her while she passed.

    Saw your photo on fb - you look good!  All that gardening and eating your veggies!  Fine estate you have going there!

    Great results Pops!!! love that netting also. When i retired they offered me the old netter in the shop but i said i probably wouln't use it. MY BAD!!  Sorry for your losses, however i bet you have many loving memories.  Reinhard

    Had the party, not everyone showed up but sill had a great time!  Cut up 2 of the chickens and J.R. grilled them, they were delicious!  And Gone, too!  Some party photos:

    To the right of my youngest son, Rob,  there is a flagstone area known as "the beach" - it is a shallow area where little kids can bathe and play, put in special for them!

    As you can see, everyone had a great time!  I didn't get any of the food, usually there were people crowding around it constantly!  But, it was all delicious and we all had fun!

    Glad i came back to this thread. I'm going to smoke a whole chicken myself this week and i wanted to re-fresh on this great information [using your brine also].  What an awesome pool!!! Cant help but have a great time at your home. thanks Reinhard.

    Thanks so much, Reinhard!  But, it was at my oldest son's house, not mine!  I can't hardly afford an old bathtub in the front yard, lol!  He is CEO of his own corporation he started almost 20 years ago; they've grown out of 3 home offices already and service the IT needs in the whole metroplex.

    Enjoy the chicken and post your procedure on here so all of us get to drool!
