Posting here because I am going to be doing multiple meats today and tomorrow.

Starting out with 2 briskets...one is sold!  One is a 9 pounder and the other is a 7 pounder.



I injected both of these.  1st time for that!

Have 2 butts in as well.  Both of these are 9 pounders...and I have injected one to see the difference!



Here they are in Witchy Woman with the tube going happily along!


Using a mix of Pecan and Bourbon for the smoke.

Updates!  The non-injected butt is the first one done.  Taking a cooler nap now.


The Briskets are in a foil pan with some extra stuff for juicy goodness for later and back in W/Woman.



Below are some pics after the 5 hour check and to add more water to the pan.

Everything is resting now...taking the cooler nap.  Will post more pics when I have gotten all the other kitchen stuff done and I get things sliced and pulled. Took about 10 hours...and I was running between 270 and 275*.

Just happened to stumble into this and wondered what it was all about.

Looks like my Vault did a few weeks back! LOL!!! Nice sized load with a comfortable fit you had going!

I'd be interested in your take on whether injecting is worth the hassle and bustin' temps through the danger-zone...haven't injected anything myself for years just 'cuz of the hassle, but if it turns one's crank, then I say let it roll.

Let us know how you liked the high temp smoke? I've been doing butts at 275* lately and they come out great, curious how the briskets handled it?

Lookin' good!  I'm just prepping tomorrow, and nothing on the smoker 'til Monday.  Until then, I'll just drool over everyone else's qview!  Keep it coming!

Looking really good Kat, hope everyone enjoys.  I'm with Red today, no cooking.  Nothing, but racing today, Monaco, Indy 500, Charlotte 600 and our traditional big bucket of Colonel Sanders and a few brews.  BB ribs tomorrow though.

Haven't cut into the briskets yet...going to do that later this morning.  Going to do chickens and some sausages on Black Betty...weber kettle...a bit later.  The bark on the butts was amazing!  I am not foiling them ever again....this is the 3rd time NOT foiling...so I am sold.  The briskets looked really good with the temps.  A little dark around the thinner edges...but we will see a bit later when I slice them.  Will update with more q-views after that.  We are having about 15 folks come over to open the pool for the Summer today.  Eric...will let you know about the injecting the butts when I get the taste tests from the guests.  Here are some pp q-views from Midnight last nite.

Love this fat separator!  Never really used the juices from the foil pans....but I did last night.  Taste test with a bite from the pan after mixing it in with the pp....YUMMMM!

Will have the brisket, chicken and sausage q-views later today.  Gotta get to cooking more today...and cleaning up for company!

Looking good Lady Kat!! I've been going with higher temps too, and it seems to pretty much eradicate the stall and speed the whole process up by a pretty good bit.
