Okay folks. I am finally home beating wifey's curfew by 45 minutes. Phew! Close one! I want to fire up that WSM tomorrow but first:

One more for the road.





Wifey went & got supplies.



First we get the fattie ready. We are looking at zucchini, onion, red bell pepper & fetta cheese with sage sausage & thick hickory bacon. Here is the wrap.



The sausage flattened & seasoned with garlic & white pepper.



Veggies mixed, sauted & added to the sausage for the roll.





Fattie is ready for tomorrow.



Chicken washed & dried. (Sounds like laundry.)



Added EVOO & rubbed with Jeff's rub.



Everything is in the fridge ready to go. We'll see you in about 8 hours or so. Goodnight.
 
What time and do I need to bring anything?

I will be in Cypress tomorrow starting my new job so I can be there right about dinner time _ LOL
 
Okay. I am finally back from wild B-Day partying. I can not tell you how much fun I had. Here is part two of this qview. We have the chicken & fattie on the WSM. I fired her up to 225 & let her settle in to the TBS. This baby purrs. Put my chicken & fattie on to smoke under apple wood.
Don't ask me about times. I was drinking & was not paying attention. Will have better details next smoke. (In the background is my Char Griller feeling all lonely.)



Now since I don't have to babysit this baby, I start the rest of dinner. This is a quick pasta sauce made from red bell peppers & seasoned onions. You will see the other items added to it in the qview.

So I go to check the time on my smoke. The left thermo is the chicken, the right is the fattie. Fattie went in first. You will notice that the probes are inserted into a hole right under a bolt next to the door. Well smokers, Weber did not package that last bolt in the box either. I was supposed to 14 & I got 13. Idiots for real. So, I figure, until I go get a bolt, I will use it as a hole for the thermo's. So far so good.



Back to the kitchen. Sliced some carrots to add to some cabbage with a simple garlic seasoning.




But of course, this is what you really want to see, right? You know you do. Come on. Admit it.

Well, the WSM smokes differently so I had to crisp up the bacon in the broiler. But the fattie was smoked properly & quite tasty.





This is what happens when you neighbors give you screwdrivers & chicken to smoke. Hmpf. Next time I say, more screwdrivers!!! LOL. Of course their chicken is not prepped, they just want some heat on it. The upper right side, the darker of the two, is my immediate neighbor whose dark meat was on the smoker longer. The lighter chicken belongs to my neighbor across the way from me. His chicken is 20 minutes behind the other. As you can barely see in the photo, I have both groups of meat probed.




Dinner is plated & served.





We are still eating on the German Chocolate cake for desert. Have a good night & Thanks for looking.
 
Looks like I missed out on a good dinner! Now, is it just me or does anyone else think those wheat noodles look like worms?
