    Hi guys, Im very new to smoking only dont it a couple times. I was thinking of smoking some linguisa tomorrow. Not sure of what temp to cook to if any? Doesn't seem like I should be putting a probe in something like that?

  3. If you don't have a cold smoke setup, get sausages very dry or put in 130 dg smoker for 1 hour with no smoke. Then apply heavy smoke at 140 dgs for a couple hours, Raise the smoker temp to 160 for 2 more hours. Then raise smoker temp to 185 until internal temp of sausage(yes you must poke the little darlings) is at least 152.
