Leftover Pulled Pork - quick ideas, please?

No Bake Enchiladas with fresh green sauce (sounds hard, but very, very easy!)

Green Sauce:
* 7-10 fresh tomatillos
* 1 yellow or white onion
* 1-2 fresh serrano peppers (more if you kids will do spice) (I like about 4-6)
* 1 bunch fresh cilantro
* salt

Put tomatillos, onions, and serrano peppers in a pot, just cover with water and bring to a boil. Let boil for about 10 minutes (till tomatillos are done, but not exploding). Drain off water, place tomatillos, onion, and serrano's in a large blender or food processor - don't blend yet! Add fresh cilantro (big handful or two), and a good pinch of salt (salt to taste). Give it all a whir in the blender - note: blending hot stuff can cause it to try and blow the lid off the blender! Put a folded dish towel over the lid and hold it on with your hand.

OK... sauce is done, put sauce back in pot used to boil everything in and put it on the stove on low (just to keep it warm).

Enchilada filling:
1 lb. or so of pulled pork
1/2 onion rough chopped
1/2 bell pepper diced
1 cup sour cream

In large skillet sautee onions, bell peppers, and pulled pork in a little veg. oil just till onions are translucent. Add sour cream and stir till it is eavenly incorporated and warmed. Put on low.

Assembly:
Heat a stack of corn tortillas in the microwave for about 1 minute (figure 2 for each kid, and 3 or 4 for each adult - I do 4 because these are soooo good!

In a small fry pan heat about 1/2" of oil (med. hi setting on stove or med. if your stove runs hot).
Using tongs take steamed tortillas, dip in hot oil for about 5-7 sec., remove from oil and immediately dip in green sauce. Once coated with sauce put about 1/4 cup (two big table spoon fulls) of filling in tortilla and roll it up. Repeat till you got them all assembled - having 2 people makes this go realy fast.

Top with a drizzle of green sauce, fresh chopped lettuce, cojito cheese (the round fresh milk cheese from mexico - all major grocers carry it), and some fresh diced tomatoes. Tuck in a bib, and ENJOY!

I learned this from my sisters boyfriend and it is amazingly good. My whole family absolutely loves these type of enchiladas!
 
we always do one of two things with our leftover pork (both loin and butt). we either:
1) chop it up fine and mix it into our smokey baked beans or
2) chop it up fine and reheat it with half a packet of taco seasoning and use it as taco meat.

both choices are delicious.
 
Never heard of Memphis BBQ spaghetti,, please tell us more and a recipe please. Have about 2#s of PP calling to me from the freezer.
