First off Dutch's enchilada recipie was awesome thanks Dutch.
I took my leftover brisket and used it for the enchiladas and followed the rest of the recipie. If you have never done this recipie it's the bomb.

The leftover brisket which turned out great.

The smoked meat in the enchiladas made the best tasting enchiladas I have had in a long time.

Jason.........looks great........yeah i have dun em...........its a great recipe..........smokebuzz and his dots came down one weekend and we had them.............awesom, is just about all you can say
 
Ummmm.....I love enchiladas and your Q-view put me over the edge. I have some left over brisket from yesterdays smoke and can't wait to try this out.

I wouldn't see why not smokinjoe. I think next time I do a yard bird I'm going to do an extra one and make enchiladas from that.
Steve I had about 1 3/4 pounds of meat and pretty much followed the rest of the recipie except for the amount of tortillas.

I dont know if I can handl it all. First there were butts, and fatty's, then ABT's, Armadillo Eggs, and Stuffed Peppers, and now Enchiladas! That doesn't even cover the normal stuff.

Enchiladas?
