Left Over Smoked Turkey

    My fav way to eat turkey is cold & the smoked one I did christmas day (my 1st) made the best I've ever had.

    My wife makes a white bean chili with turkey pieces. (chicken works too)

    Hard to get by those sammies with a nice slice of mater on wheat breat though [​IMG]

    That Chili sounds good Flash. Might see about getting recipe from you next time I smoke a bird.

    We've used the frame just as you would for turkey frame soup with homemade noodles, vegies, etc.

    I like smoked turkey legs done with a brine and smoked until they are kind of like a ham. Leave a couple on the smoker to soak up a little more smoke if you like it a little more smokey and then use them like ham hocs or in addition to ham hocs. They go great in a pot of just about any kind of dried beans. I have done them in addition to ham with green beans and potatos (One of my childhood favorites) Or try boiled with a mess of collard greens for the new year too.

    If you are talking about the meat off of a full bird, try making some turkey salad sandwich type spread (Mayo,finely diced celery,onion, pepper, whatever you like) Or chop it up add some gravey and do the SOS or open faced roast turkey sandwich deal (SOS is Sh*t on a shingle, a meat in gravy over toast where as the openfaced sandwich would be on untoasted bread, either way not really sandwiches IMO because tou need to eat it with a fork)

    Eating left overs is like comfort food, sometimes it is kind of plain to look at, but good to eat.

    Shepperds Pie, Pot Pie

    Do up a simple grilled cheese with a little turkey and very thin onion.

    I did the turkey salad spread in a food processor a few years back. I thought that I ruined it by over mushing it. I ended up taking about a quart of it and a loaf of bread to work the next day. I only got one sandwich out of it and had to scrape the bottom of the bowl to get that! It was good stuff!

    How about a nice salad with your favourite greens with salsa,
    grated jack cheese,sour cream,sliced jalapeños,topped with your left over smoked turkey sliced very thin in a tortilla bowl [so you can eat it too!]
    A little chopped fresh cilantro sprinkled on top is good too!

    My favorites are:
    Enchaladas
    Chopped turkey with onion and cream cheese in an ABT
    Stir fry with veggies over rice
    Zatarans dirty rice doctored up with the trinity, sasauge and turkey

    They make a nice addition to SOFlaQuer's Chili Verde recipe.

    They also make a good stuffing for the inside of an ABT.

    Turkey ala King is always good. Just like Chicken ala King but use turkey instead of chicken.
