Hello my name is Joe and I am fairly new to smoking only starting after having the best turkey dinner in my life last Thanksgiving (First ever smoked). I am more of a lurker on this site trying to learn techniques and recipes.

So far I have only been smoking Ribs "MMMMM" trying to get the hang of things but this weekend during UFC 100 I will be doing 2 chickens and documenting the whole process to get some feed back from more experienced folks. Hoping they turn out as good as the ribs have been.

Been mainly using Mesquite for smoking but got a hold of some apple wood from a friend so gonna give that a shot and see what happens.

Not sure what else to say at the moment will get that smoke with Pics up this weekend.

Glad you are loving the smoke already and decided to join the site. Smoked turkey is one of my absolute favorite things.
Was watching the top 100 countdown for UFC tonight, probably going to watch 100 so I'll be looking forward to your Qview.
