This is the result of my latest attempt to get some maple flavor into my bacon. I used Mapleine concentrate to try and flavor the bellies while curing. While it gave the bellies a great color in did not give off any flavor.
Here are the ones with the mapleine and cure

Here are all 3 ready to go into the smoker

Here they are after the smoke

And here are some sliced up ready to bag

Thats some nice looking bacon Scarbelly!
I haven't been able to get a good maple flavor in my bacon either.
Pineywoods has a maple powder he says works good, maybe he'll chime in and tell ya about it.

Thanks Dan
I have been looking at some of the websites with bacon cures and have not seen one yet. If I find one I will be sure to post it up as a lot of folks seem to have interest in finding something that works

Hey guys,
I injected 4 ounces of Maple Syrup into one of the pieces of my last belly smoke. I got a slight maple taste out of it, but not enough to bother with it again.

Hey Jerry did you ever try this? I am getting ready to order some more bellies and was thinking about giving this a try
Thanks

This recipe uses a pint of maple syrup and sea salt and no water in the brine-

Another recipe, slightly different-

And one more- this one calls for a quart of maple syrup-

I don't make bacon myself so when I posted on the mapleine thread a while back it was to share what knew about that flavoring. The recipes posted above are a result of my love of all things maple(my version of maple bacon is to cook the bacon and pour maple syrup on it).
The first and the last recipes look like they are very sweet and expensive, maple syrup in Maine is $30-35 a quart.

I buy stuff from Nature's flavors for candy making. They have great products. Sometimes ya just gotta think outside the box! I have also bought maple extract from the grocery store and added some of that to the maple syrup, I'm doing that today for a turkey breast I'm smoking.

thanks for the links - The reason I tried the mapeline was that it is a concentrate - my next round will inject them and also try the maple cure that Pineywoods sent to me - I usually buy 10 - 15 lbs at a time and cure 2-3 different types at a time - once you do your own bacon you will not go back to the store unless you are buying some cheap stuff for ABT's
