last minute wings.

    Wasn't sure what I wanted to do today so at the last minute I thought wings, took a pack out that I had vac packed a few months ago a quick thaw on them fired up the pellet cooker to 225° and seasoned the wings dumped on the cooker and spread out about 45 minutes bumped temp to 275° for 15 minutes and then bumped to 330° for about 30 minutes. they were in the 190's internal temp so I put them in a pan and covered with foil while I finished some other things for about 10 minute time to eat they were the best ones I have ever done on the pellet cooker so far.

    Great looking  !  Like to do Birds , I enjoy the 'Whole Bird' , Trish is a 'White fan' . . . and 'NO' bone... [​IMG]

    Yes give or take a few minutes, to get the skin nice you really need to finish above 300° I try to stay 325-340° because if you get much hotter depending what you season with the seasoning will scorch or burn. These were not really crisp like a fried wing but the skin was nice it wasn't tough, rubbery or leathery. I think the rest in the foil cover pan helped with that a little bit. When eaten the meat pulled right from the bone. Post back here and show us you results.

    I do whole also, and love the little cornish hens, I used to pick up about 2 dozen of them and around this time of the year we would deep fry them and I would have a gas grill full of taters rubbed and salt and peppered I would tak ethe hens out as they cooked and sit them on a sheet pan on the warming rack. Also had another turkey pot going with corn cooking. I would feed the people at work and the people at some of the businesses next door to us The nice thing with them is I had no messing around with carving and cutting. I did discover from doing this for another group of people that there is a lot of waste as you said about the white meat, then the people toss the rest of the bird away.

    Money, there is the kicker anymore, the price of the meats have been going up and up and it is expensive to do this now. We don't seem to see much of any type of beef cut for less than $4.50 and even ground meat is in the $4.00 range.

    You may need to ask the wife for a larger allowance, don't let it cut in to your other habits money though.

    Here's what I got at 45 min and bumped the heat up to 300 for next 30 and them gonna finish it at 325 for 15 to finish

    Those look good, Wings are different sizes, mine were not as large as I have bought in the past but they appear to be larger than yours just from looking at the spaces on the grates. If yours were over done this could be why. But hey as long as they were edible, right?

    oh I ate them. Ya they're ones from the meat case at the local market so not all the same but taste was good. Next time I'm going to start in a pan of red hot and melted butter then pull out of and place directly on grates.
