Keeping is simple as i could..... Full spares, membrane removed and only the breast bone cut off. Mustard slather and rubbed as drum warmed up. Got drum up to 240*, put in ribs and walked away!!! No spritzing, turning or peeking. Checked 4 hrs later, gave em the bend test and they were perfect! By imn88fan Tossed em in a pan, covered with foil and made our favorite garden salad... Sliced tomatoes, fresh mozzerela cheese, lemon basil, EVOO, salt n pepper. By imn88fan Ribs were fantastic......nice cherry smoke, moist and almost fall off the bone.
