Keeping is simple as i could.....
Full spares, membrane removed and only the breast bone cut off.
Mustard slather and rubbed as drum warmed up.

Got drum up to 240*, put in ribs and walked away!!! No spritzing, turning or peeking.
Checked 4 hrs later, gave em the bend test and they were perfect!

Tossed em in a pan, covered with foil and made our favorite garden salad...
Sliced tomatoes, fresh mozzerela cheese, lemon basil, EVOO, salt n pepper.

Ribs were fantastic......nice cherry smoke, moist and almost fall off the bone.

Simple is good. For the past year or so I've kept my rubs considerably lighter on pork butts, ribs and beef chucks. I never spritz. Works for me.

Great looking stuff as usual Bubba!
