    Oh Black Forest Kielbasa sticks.

    Cure #1 mixed into the water. And Kielbasa mix


    How bout some mustard seeds.


    2 lbs of black angus der hoofen


    And some oak smoke

    These got pretty dark. Cooling now then fridge for while.

    [​IMG]  asking a stewpid question......I know you have said they are Black Forest ones....what makes them so dark?  Seasoning didn't look dark...or is it the casings or the amount of smoke? [​IMG]

  18. I'm a sausage-making newbie... do these  sticks have to be refrigerated after they're smoked? I'm looking for something to take with me while campin' and fishin'. [​IMG]
     
  19. I'm sorry...but this has to be one of the oddest posts I've tried to follow!  I have absolutely no idea what or why these are black...is their squid ink in it or something???  I also have no idea what ya'll are talking about snipes and birds...no clue [​IMG]   

    I'm going back to work now...
