so i did a search on this and found good info from hogwarden, but still have a question.this will be my first attempt so bear with the newbie question. so if i plan on 18" links i make them all seperate right? the dowels in my smokehouse where they will hang are 1 1/2" inch in diameter. so at that point should i use string? [as to not waste so much casing?] if i tie a string knot on one end,and another on the other end with say 4" of string in the middle to hang would the sausage slip out of the string knots when in the smokehouse? or should i tie a knot in the casing next to meat on both sides then tie string below casing knots so they cant slide out? this seems like alot of tying. i hope this makes sense, after reading this i now realize how hard i was on my brain cells when i was younger.
