    so i did a search on this and found good info from hogwarden, but still have a question.this will be my first attempt so bear with the newbie question. so if i plan on 18" links i make them all seperate right? the dowels in my smokehouse where they will hang are 1 1/2" inch in diameter. so at that point should i use string? [as to not waste so much casing?] if i tie a string knot on one end,and another on the other end with say 4" of string in the middle to hang would the sausage slip out of the string knots when in the smokehouse? or should i tie a knot in the casing next to meat on both sides then tie string below casing knots so they cant slide out? this seems like alot of tying. i hope this makes sense, after reading this i now realize how hard i was on my brain cells when i was younger.

    If I am doing ring style sausage I don't roll or tie them at all except for the two ends I tie those. Otherwise I just put my dowel out and put it around the dowel in a spiral type fashion. Basically just wrapping the sausage around your dowel in the length that you want and then when they are all done I cut them with a knife at the top of the dowel where the crease is created from the dowel and the weight of the meat. I will see if I can find a picture so you can get a better idea of what I am talking about.

    This is what I do but I don't spin them on the top.

    I do mine the same way as in the link there
    then when they are done smoking I cut them so I have 2 links together
    hes a pic of the last batch I did a couple days ago right out of the smoker laying on the table with the dowels still in them

    It sounds to me Dave that you are tring to over think this whole thing. We all do it sometimes. I would just make the sausage like it says and don't worry about how far apart the links are. Your dowels do sound alittle big but if you cann't find some smaller ones metal perferrbaly. You can use hooks to I do. All I did is beand one end of them and you can use your shelf in you smoker.

  6. You can also just leave a little casing left on each side and tie the 2 ends together with a surgeons knot or 2 square knots to make rings and hang. Also just twist into desired links and hang as stated above.

    damn you all and your pictures! I have over 20# of smoked sausage in the freezer, but now I want to make more!
