Hi. Im sizzlnchef love to smoke.. Have a question though. I have a propane smoker and was wondering do I always have to use water in the water pan when I smoke? Like boston butt do i need water in the pan to smoke them? Please help!!! Thanks

Yes always use the water pan but you can if you choice to use other than water. I don' taste a difference personally but other swear it changes the flavor of the meat.

The water pan not only helps control temperatures but can prevent grease fire flare ups like you get on a grill. No what I mean?

Use the water pan. As stated above it helps regulate temps. It holds a lot of heat so the temps recover quicker after you open the door to add wood or baste (spray) the meat. Good luck in your smoking endeavors.

Welcome to SMF,and yes it's best to use the water pan,,,helps keep the heat controled and keeps a moist atmosphere for the meat ....and remember if it needs re-filled while smoking ,use hot water so you won't lose to much heat .

Some folks use water, some use other liquids, and some use sand... I haven't tried anything but water in my ECB, which is still real new to me.
