Hey all. Just got my new Masterbuilt 40" electric smoker, model 20070311. I am 52 and live in Boonville In and love to eat smoked food. I am not new to electric smoking but to be honest I have used the round Brinkmann for about 20 years. Not much you can do with them other than plug it in and go. I did control heat by covering it with towels but this held in to much steam and gave the meat a bitter taste. I played with wood types and flavors in the water pan. I am looking forward to learning this smoker with SO much more control. I am open for any suggestions. Doing the seasoning as I type.
