just finished a top round roast, eye of round roast and 3 pork picnic skins

    smoker temp 230-250

    charcoal with hickory and apple chunks

    the roasts

    internal 140

    smoke time  4 hours

    with 1 hour rest

    came to a little over med rare

    the skins left on to render the fat and breakdown the tissue

    7 hours

    the skins right off the smoker have texture of chewing gum     very rich gum

    after an hour rest reheat strips in micro more fat renders    very good will crisp up

    all covered with Jeff's rub

    very, very good
