I've wanted a smoker for a long time, wanted the convenience of Electric, and didn't want to spend money on a small smoker as I know myself well enough to know it'd just be replaced.

The HHC-900 dual door "heated holding cabinet", This one is custom made for KFC, complete with the Colonel logo up top, and marked "EXTRA CRISPY". Large enough for 13 sheet pans or grates at 18"x26" each, and, one assumes, designed to keep the Colonel's eleven herbs and spices between 160 and 210F. All this for, theoretically, $100 plus whatever gas it takes me to drive from Cincinnati to Ann Arbor, MI and back to fetch it. Should I wear my Ohio State sweatshirt and show up with the radio blaring "We don't give a damn for the whole state of Michigan, Weeeeee're from OHIOOOOOOOO!"? Or would I maybe get beaten to a pulp?

My goal is to do very close to Walleye1, electric heating element and a blower, with external smoke generation, though I'm thinking of building something similar to a Porkypas cold smoke generator out of copper tube.

I'm a computer geek and wannabe engineering nerd. I want not only the PID, but live realtime temp stats I can hit from on a web browser on my iPhone. I want Temp alarms that will text me if something goes askew. I want it so idiot proof I can start stuff and go to bed. Time will tell.

Any hints or suggestions anyone has would be greatly appreciated. I've read every thread that's still here in this forum, and many in the charcoal/propane as well. Short term will be wheeling the thing into my driveway, long term will have it ducted through the garage roof so I can smoke in the comfort of my garage.

So, how many briskets can I fit on 13 grates?
