Couple questions. I ground some deer meat to make into jerky. Added the seasoning kit which had sure cure in it. Mixed it up and let it sit overnight to cure. Got only half of it through the dehydrator the next day. Does it hurt anything for the other half to sit in the fridge for another day before dehydrating it ?

Other question: After the jerky is dried and cooled I usually package it and put it in the freezer right away. Would it enhance the flavor to let it sit at room temperature for a while before freezing it?  Thanks.

I think it has sat at dehydrator temperature long enough, for any "blooming" to take place...
