Jeff's Wings - First Go! (Qview)

I've tried smoking wings a lot of different ways and never really perfected them to my liking. So I'm trying out Jeff's method for the first time, so I picked up a 5lb pack of unsplit wings first thing this morning after browsing SMF and having my morning joe.

Got home, split about half the pack and vac-sealed and froze the other half as it's only for the lady and I tonight. Got 30 pieces after splitting.

Rubbed in EVOO and sprinkled in Jeff's Rub and into a ziplock bag for 2 hours, then whipped up the buttermilk/salt mixture and added it to the ziplock. Playing the waiting game now before firing up the WSM!

As for the sauce, I made up a batch of Jeff's sauce, but instead of mixing it with plain honey, I will be mixing it with honey garlic sauce.

Never tried the buttermilk brine on anything before. Real excited to try this one.

I think that'll be tasty Duke ! My experience with buttermilk & chicken is it works awesome, great taste ! Lookin forward to your results !

These. Wings. Are. Legit.

I don't know how the buttermilk does it, but these were fall off the bone tender. I'll be using this method again and again.

Great flavor on the sauce too, sweet with a little spice, just the way I like wings.

I was thinking of finishing these off on the Weber kettle to crisp up, but I've ruined dozens of wings in the past that way. I decided to stick with Jeff"s method with the oven broil.

Damn- nice lookin' flappers there.

I'm doing the same thing right now & your pics are making me anxious. I'm using Myron Mixon's rub & Jeff's buttermilk/salt brine along with Big Bob Gibson sauce I made this morning.  Thery're almost ready to put in the smoker. We also planned on crisping with the broiler.

Hey Duke, is there a specific thread or something that shows Jeff's method for smoking wings? I've searched and searched on here and I can't find anything on it. Those wings look amazing and I want to try them for sure, but I don't want to get the buttermilk-salt ratio wrong..or anything else for that matter!

I wound up doing too little. These wings didn't make it through the night.

I'll be making a larger batch next time. Maybe even try the same method on some drumsticks
