    here's the sausage I smoked today, came out pretty good, still learning my pecos smoker, having a new grate in the firebox helped a lot to keep temps up

    all I did was smoke at 225 for about 1 hr 45 mins, sprayed with apple juice twice during smoke. Roasted some red peppers in oven and plopped over spaghetti.
