IT Temp ?

    I am smoking a turkey at this moment for lunch. 

    My question is I have read that the IT temp need to be 165 in the breast, alone with 175 in the thigh. My question is where at in the thigh?

    If the bird is whole, inside the thigh bone on the cavity side.... The cavity should be cooler than the air in the smoker.....

    Yes it is whole. a 12 lb der.
