Good morning all. I started a 14 pound packer on my MES40 at 6:45 this morning. i am using the temp probe and the internal temp just reached 140 degrees at 10:45 am. i am smoking at 240 degrees. I have heard multiple IT temps to pull and wrap but not sure. what temp do i pull it? I started with mesquite using a Jack Daniels rub and an internal temp of 42 degrees. Then i switched to Apple and Maple chips. It smells awesome but I just dont know what temp to pull and wrap? any suggestions my esteemed mentors?
