Hi All

On Jeff's advice I thought I'd add some personal details for you.

I'm referred to as Smiff even though my real name is Paul (Smith), I'm 63 and live in a beautiful part of Australia called Tasmania. If you Google it you'll see it's a small island of about 500,000 people that sits south of Australia. I live on Mount Wellington about 500metres up in the capital city of Hobart. Our little town's called Fern Tree. I'm married to a Kiwi (New Zealander) and she's a great wife and bloody good cook.

I've done lots of courses including a sausage making course and a hot smoking course but I've never done a cold smoking one. I have some mates who are hunters and serious sausage makers and one guy who is right into cold smoking meats. I have just procured a commercial steam dumpling cooker that I intend to convert into a smoker and then I want to get into this meat smoking game.

I've joined the SMF because it seems like a very well organised group from which I might be able to get support and ideas and who knows I might even get to a standard where I can give some input also.

Feel free to communicate and I'll share any information or pictures that I can.

Thanks for that. I tend to get involved with other crap when I get home and don't spend much time on sites like this. To be honest I believe you're right in the depth of knowledge and information on this site that I must make a concerted effort to view it more frequently. When I find out how to share some pics with the others I send through a few of our back yard and other cooking items I have made.
