Thanks to TulsaJeff for creating this website and forum. Having experienced really good smoked meat about a month ago, I have much to learn. I look forward to being part of this community. I use a charcoal barbeque at present. Hoe can I control the temperatures in smoking is my biggest challenge. Another challenge for me is how to smoke in the spring and fall when the outside temperature might only by in the 60's. CanSmoke, eh!
