I was not planning on getting a boston butt. Alas, being St. Patties day prices were $4.12/lb!! for corned beef which I really had a craving for. Guess I need to wait until later.

But I really dont think I am out much as I worked this beauty up today. It is resting and absorbing juices.









Rubbed down with brow sugar.



Cant wait to get to this. I may just throw it in tonight so its ready for lunch, or let it enjoy its soak, decisions, decisions.
 
Get at it and smoke it and relax.
 
I know! I have high hopes, it has been in the smoker and is foiled at 170. Need to make it back from class soon!

Oh the things we do for some meat!
 
Well im going to be honest I learned a little today and I wont be writing rave reviews but it was my error.

before class it jumped to 170 really fast. In fear it would be done to fast I turned the temp down 20 degrees. And when i got back from my hour long class it was at the same temp... Then I only got it back up until 190 when I pulled it. I should have just left it in to 200+

BUT I will say it was good just not fall apart like my last one. Flavor was spot on.
 
I sliced it. I was pretty bummed that it didn't pull or fall apart because I was shooting for PP. Alas I will get it next time and not pull that crap again.

And no I didn't take pics because of disappointment but my friends didn't say a thing just dug it and raved about it.
