I started smoking my pork butt too low

    I accidentally set the cooking temp on my Traeger smoker at 170 instead of 225 for the first 3 hours of cooking. My question is can I safely cook the pork at 250 for the duration of cooking without concern for bacteria? I plan to cook it to 200 degrees before pulling it.

    Any knowledge sharing is appreciated.

    If you don't have any idea that your IT actually got ton140* before the first 3 hours was up, you may be on the border line, but I really think that you are OK. I'm sorry that this is a little late, but keep going at 250* or higher until the IT is 200-205* and enjoy your butt.

    Joe, this only applies to Injected, BRT and Ground Meat...Even at 175, surface Bacteria was killed within the first hour or less. Beyond that, smoking an intact but is safe...JJ
