well i went and got a new battery for the temp gauge took the brisket to 200 deg and pulled it seems odd that it only took 5.5 hrs to cook a 7lb brisket
 
found the problem my temp gage on the smoker is wrong was reading 250 ans was actually 325 what a bummer where can i get a good quality guage?
 
Let us know how it tastes and how tender it is. Put a digital probe in the smoke chamber. I put mine through a potato so the tip doesn't touch the grate.
