It has been raining non stop for what seems like a lifetime here in South East Texas and today the good lord said let there be sunshine.  As a tribute to the burning ball of gasses that gives us light I decided to do an easy Baby Back Rib smoke.  I got some good racks at HEB a few weeks ago and found this sitting next to them.

I just built a UDS but these are for the MES while I wait to go pick up my charcoal basket.

Let me tell you something no problem with the size of these chips.

Now back to these chips they had cherry, oak, pecan, and mesquite for $1.99 a bag I picked up the pecan and oak since I had some of the rest.

3 baby backs just went on at my place also. Still kinda new at this so I am doing more experimenting. Just got myself some traeger apple pellets to go with my lump and briquette charcoal. I have a new rub on 2 of them, and doing them 2-2-1 with some sauce going on them the last hour. The other one is being done the way everyone liked so well last weekend, 4-1 with the 4 being in foil with barbeque sauce and no rub.
 
Congrats on some sunshine finally! Got a couple racks of bb's for the weekend too, can't wait to smoke'em up!  Looking forward to some finishing Qview!

As for the chips just reloaded twice in two hours and still was getting good smoke these may be my new favorite chips lets wait and see what the kiss of smoke tastes like on these ribs.
 
Hmmm.... usually the only "big ball o' gas" around here started with Dutch's Wicked Baked Beans!

Here we are 4 hours in kinda too fall apart for my taste but this is how my wife like baby backs.

What was your smoking temp to just smoke for 4 hours. Im picking up some cherrry tomorrow for a smoke
It was right @ 230-235 it was 5 hour total using 2-2-1 I prefer 2.5-1-1.5 but the wife likes fall of the bone.
