Name is John, in 28 and live in NC, for the past 10 years I have served as a military bomb squad technician. I just started smoking this weekend and only have a pork shoulder butt under my belt. I did however just smoke and reverse sear a New York strip tonight and I have a brisket flat and another pork shoulder butt to experiment on this weekend. I am humble in the fact I am clueless when it comes to smoking and I look forward to any and all advice, opinions or just plain criticism. John, welcome to SMF!  Glad you are finding time to smoke some meat.  You'll have it mastered in no time.  Honestly, it is easier than you might suspect.
