I finally figured out how to smoke ribs!

    I'm sorry that I don't have a bunch of photo's because I thought this would be like all the other rib smokes & not up to Judy's standards. I was wrong I finally got it right. Did some BB's on the WSM, changed everything I have been doing & came up with a freakin' winner. Judy loved them & so did I. I've only been trying to do this for about a million times. The smoke ring goes all the way through. There is no white meat anywhere in the ribs, it's all pink. They are very tender & moist but not totally falling apart. I documented every step & hopefully I can duplicate this again. I only took one photo of the ribs & you can see there is no white meat. Here's the photo:

    I like the dark outside,  love a bit of char or crisp on my ribs.   Looks good

    Well yea there isn't any  white  meat because it's all covered in BBQ sauce.

    Ha Ha Ha just giving you crap.

    So what did you do different this time around?

    Hmmm, I can't remember any white meat in my ribs, but will be waiting for your breakdown.

       They look great Al[​IMG], The rest are jealous of your triumph[​IMG]. Good for you for recording the process,it helps to correct your technique[​IMG].

    Hey, just a minute Al.  The last time you did ribs you said you'd finally figured out how to smoke ribs.  I gotta agree though, these look over the top.  [​IMG]Too bad they look undercooked......oh, wait, you said that's smoke ring.....  Sorry, couldn't pass up on that.  I hear it too much.....  oh.... it's not done......  Fortunately, we all know different.

    Yea those ribs are really pink. Are you sure they are done?????????????? I heard that undercooked pork is bad. [​IMG]   Just saying. hehehehe
