Howdy, I'm TheRooster just getting into Smoking. My wife bought me a Smokehouse 3 rack electric smoker for Christmas. I know absolutely nothing about smoking so looking forward to your help and suggestions. I am a USMC Vet

served in OIF got home in Nov. 2007. I have a wife and 2 kids. I love hunting and fishing have a small farm, 5 acres. I currently work in Law Enforcement. Pleasure to be here.
 
Welcome Rooster, great to have you on board with us. So you don't know a thing about smoking huh? Well neither did any of us when we started. The important thing is you found us. No such thing as a silly or stupid question here, if you need to know something, by all means ask.

I would call 5 acres a decent farm, not quite so small.
Lots of gardeners (and smokers) on the site, love sharing experiences and info on both.

First off welcome Rooster to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

I need to know from some of you top smokers what I should do. I cleaned up and put the rub on six Babybacks a large Prime Rib and a big Ham they have been the refrigator for 5 days merinating.. We had a big blizzard here and my guest could not make it over so I didn't smoke any. Question is can I freeze this bunch of fine meat before smoking or after smoking.
