I've been grilling for years. I have done some cheater smoking (smoking on a charcoal grill for 2 hours and finishing in an oven for the rest of the cooking time.) I have used my father's ECB several times, but I was never satisfied. So when I was ready to start smoking for real, I bought a Char-Broil 365 and did a few mods that I found on here and YouTube. But because I did so much reading on here, I am kicking myself for not making a Mini-WSM or UDS. But, maybe next year. Actually I think I might make a Mini-WSM for my dad for Easter.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

I sure do like my UDS but you will use a mini more.
