Albert City, Iowa
Howdy all, My name is Fred and I am now from Albert City, Iowa a small town of about 700 people. I am originally from a small town in Texas, Dallas....well actually Arlington but have lived in Iowa now for almost 20 years.

I am married with 3 kids, I do not like the term stepchildren so I never refer to them as step but instead I say I have 3 kids. I also have 6 grandkids with one on the way ages 7 to 1. Oldest 2 are much like how I refer to my kids but they ALL call me grandpa so I love it.

I am a BIG Dallas Cowboys and Texas Rangers fan which in some areas isnt that big a deal, but up here I am the only Rangers fan I have found.

I am losing my eyesight due to a disease called ocular hystoplasmosis, it is very similar to macular degeneration. When we first found out about my eyesight it was recommended that i develop a hobby, so my wife bought me my first gas grill and much like any hobby I can never have enough. That was five years ago and now I have a gas grill, 2 chargriller offsets, an 18 WSM and a Big Steel Keg.

I am like a fisherman when it comes to BBQ, I can talk for hours and even tell a tale here and there. Look forward to yapping with you all in the future.

Hello Fr ed, and welcome to the SMF. Nice to know you have channeled your concerns to happy hours spent with your smoking. It's all good my friend.

Welcome to SMF, Glad to have you with us.

This is the place to learn, lots of good info and helpful friendly Members.

Many of our members have years of experience in smoking meat.  They are more than happy helping Newbies learn the art.

We have members who cure there own Bacon, Hams, Jerky, Snack Sticks, Make Their own Sausage, etc. if you want to learn,
this is the place.

Don't be afraid to ask questions of them and follow their advice. You won't be sorry, you will be making great Q in no time at all...

Just remember, when curing your own meats follow the instructions included with the cure to the letter, this is not something to experiment with.

Never use more cure no mater if it is Tender Quick or Cure #1 or Cure #2 than the manufacturer says to use, this can be very dangerous.

Tender Quick and Cure#1 or Cure #2 are not interchangeable, neither Cure #1 interchangeable with Cure #2 or vise versa
