Just signed on to this outfit after some reading and learning. I'm  Impressed with the civility here that seems lacking in so many internet "communities".  Also the vast knowledge (I'm sure some of it is just half-vast) and willingness to share it with us newbies. 

Not a total newbie.  Did some smoking many years ago, game, sausage, ribs and fish.  Converted a Lil Chief folding model to propane, that the wife & I packed in on salmon trips to AK. 

Inspired by you folks and bought a MES 30 that I did a few things with to get the hang of the beast.  Chicken brined, Boston butt, Brats, and some wild duck breasts.. All worked great.  Trying a brisket in the AM.

Thanks for the great info and attitude here folks!!

Look forward to some wild game & fish smoking as we're avide hunters & fishers.

Hey Gary, Thanks a lot for the welcome and your expertise.  Your recipe is pretty much  what I'm doing with the brisket today (a little jazzing around with the spices though).  Love E. Texas BTW.  Spent some fun times there in Beaumont as a young man. Great people!  I'm in N. FL.  Got the brisket urge a few years back  when I was taking a horse breeding course at Texas A&M, and the professor took us all out for brisket (texas style) and I was hooked :o).
