howdy first time smoker here - TX

Yep im down in TX and i havent smoked anything in my 21 years... Well thats about to change, im planning on smoking a few things today. Im going to smoke a brisket and some ribs, then im going to grill some chicken quarters, sausage, pineapple, and hot kisses.

I like to think im a fairly accomplished griller, so im going to branch out into smoking. I got started in grilling about 6 years ago when my dad got my a gas grill, the next day i told him i wanted a charcoal one, and ive used the gas one maybe 4 times since i got it. I read on smoking but it didnt cover the problems im encountering this morning (read about that here: http://www.smokingmeatforums.com/for...ad.php?t=76391 ). Anyway hi, and ill let you know how my first time went!
