How to smoke frozen unpeeled prawns (Pandalus borealis) in a covered big size griddle pan

Hello everybody,

I am starting a test project to see if it would be easy enough and taste wise worth wile to

attempt a pretty fast smoking process using alder chips beneath a perforated steamer plate

in my 720 mm propane heated griddlepan covered by an aluminium lid!!

My fear is that the prawns will either become too dried out or not absorb the smokiness to good taste!??

One idea is maybe to briefly toss them around in a plastic bag together with some seasoning oil in order to both add some taste and prevent them from drying out tooo much!

Does anybody have experiences from an similar approach??

I have no experience with anything like this, so I can't help ya. There may be some on here that have experience with this.

have not done prawns but have smoked large shrimp.fully thaw the prawns first. The oil and seasoning is a good idea.

Seafood does not need a lot of smoke to absorb the smokey taste. Never have used alder so i can't tell you much about it. I have always used apple or apple /pecan mixed to smoke shrimp.
