I picked up one of these bad boys at Costco.  I was curious about how to cut it properly to get steaks.  It seems there are a lot of different muscles in there with different grains.  I thought you had to cut with the grain, then I found the info graphic below and am really confused????

    Anyone know?  TY guys.

If you cut with the grain, the meat will be tougher and more stringy.  For tenderness, always cut across the grain.
