How much wood?

    In the next couple weeks I'm going to attempt to smoke something for the first time. I'm going to try brisket, which might not be the best thing to try first but I'm going for it.

    First question is about how long do i need to smoke for and how much wood am i going to need?  Right now i have three 24lb bags of mesquite mini logs.

    What kind of smoker are you using? Are you going to just use the mesquite logs? or are you going to also use charcoal?

    If you are using only wood, I think a single 24lb bag of of wood will be plenty. if you are also using charcoal I think you will use considerably less wood.

    Have you had a lot of Mesquite ? This is a strong flavored species  , a little prudence would be well worth taking . I my opinion , I would get some Maple to cut the Mesquite or

    grab some Lump.

    And , I would only use it in the first half of cooking , then pull back.  Send  a shot of your Pit, I'm assuming you have very little experience.

    Also , why chance wasting a high priced piece of meat ? Get a Butt , you are better off and save money. Practice before you jump in up to your Ass . start learning 'patience '

    now and be ahead of the game .

    Lean your machine first , did you go out and just start driving? Then continue to practice with Chicken a few times , then jump on the Brisky.

    I'm not jumping on you , I just don't want to see you get Jaded with unsatisfactory smokes .

    I'm using a Oklahoma Joe offset smoker. i was planning on get it started with charcoal and then continuing with logs.
    I have no experiencing smoking haha. Your probably right about starting with brisket.  I have a tendency to dive head first into everything. I don't think your jumping on me, these are the things i need to know. I've had Mesquite before but i don't know how much of it was used with what i was eating.  So your saying don't use the logs the whole time? Mix in some lump?

    Also how do I know how long to cook different cuts? Is a brisket done in 12-14 hrs? What about chicken?
