How much brisket to make?

I'm planning on smoking some brisket for some folks at work. I',m guessing 25-30 guys. How much brisket should I make?

I am making sides, beans and cole slaw I reckon.

Are ya doing this as a plate or a sandwich? If a sandwich you figure about 4oz finished per person and a plate is generally 5-6 oz per person but some guys go up as high as 8 oz per person depending on the crowd.  Hope this helps you

I would say that you need something like 12-15 lbs of sliced or pulled brisket. Now are you planning on serving sammie or a plate like Scar said it is a little different in the weight you'll need. I would go with a couple 14lb packers then you could make some burnt ends too if you want. This way you might have some left-over for the boss to take home...Wink Wink
