How long does your smoke last?

    I have the small Smoke Hollow gas smoker, and have found that using small wood chips ( it really variable in size some looks like sawdust) the maximum time I get is about an hour before I need to add more.  The local store has larger chips, but only in a couple of flavors (no fruit wood).  I am thinking of mixing these larger chips of hickory, with the smaller apple.  Anyone have experience with this?

    I tried mixing in a bit of red wine to the chips, all it did was take forever for the chips to start smoking.

    Welcome to the forum!

    45-60 minutes is about the norm, in my experience, unless you use wood or hardwood lump charcoal.  Those two will give you both BTU's (heat) and smoke throughout the cook.  Of course, you have to add those fuels to many smokers at about the same intervals.  The minion method stretches those intervals out farther.  Apparently, UDS's are a different deal altogether to hear the tales on this site.  I will know soon enough as I am planning to make one!

    Chips seem to be hit or miss.  When I had my gasser I used chips once or twice and then went to chunks.

    We can get chunks at Lowe's here in Indy in Apple, Hickory and Mesquite...sometimes cherry.

    I would usually start out with 3-4 for long smokes and 1-3 for short smokes.

    For longer smokes I would add 3-4 more about 4-6 hours into it.

    Remember you don't want to have smoke rolling out like a house fire.  TBS is just that, thin blue smoke.  If done right, you may not even see it (ninja smoke).

    As long as you smell the smoke, you're good, even if you don't see it.

    Keep your rig closed up for the first 3-4 hours even if you don't see smoke (barring some major disaster like temp loss or spikes) and then when you open it up throw some more on and you'll be good.
