Usually i do the ribs rubbed, sauced, and in the fridge overnite for some chillin. They do come out pretty good but, i think they can come out better. maby a little firmer in texture, not so "fall off the bone".

So, im gonna just rub em, smoke em, and slap on the sauce at the end. Any and all criticism welcomed. Reason being i have a graduation to bbq for in a few months and want to experiment to really impress since we have family coming.
 
I'm still a noob so I'm sure more people will be able to help you or agree/disagree with what I am saying but if they literally fall off the bone maybe you are cooking them a bit long? Do you wrap them to firm them up a little? I have heard that some people boil ribs before smoking but have heard it is a terrible idea due to losing flavor. I don't see why the sauce would be a problem unless it is because as it sits overnight the ingredients may break down fats in the ribs.
May be a good idea to just rub them and sauce towards the end like you thought about trying.

I assume (makes an ass out of you and me) but anyway, I assume you mean spare ribs. The 3-2-1 method works pretty good. I usually do 3 - 1.5 - .45 and they are very tender, but not quite fall off the bone. I keep the sauce for the side. I use Curious Aardvark's rub and cherry at 230.
