How Do You Charge?

I have to cook up 4 PB for my brother in about a week for a party he is having, was thinking about leaving a few "calling cards" out next to the meat thought this might be a way to make a little extra gas money lol any ways i got to thinking what would i charge to do this?...... i just seen a 10lb PB at wally for $21.00 then a 20lb bag of royal oak is about $11.00(need 2 bags) at th GFS store figure in $5.00 for seasoning that is already $48.00 and thats figuring in my time and effort so my question is how do you guys charge people what is the formula???
 
personally I wouldn't want to make any money from a party my bro was having, I would just ask him to cover the costs of the material..the time taken would be my donation to the party...

It really depends on what the party is for and who is there I suppose although I'd love to see video of you there charging family members $4 for a pulled pork sammich :)
 
3X cost is pretty standard. Volume however is the key. You need to find a better price on the pork.......especially since you have to figure about 50% yield from raw to cooked that puts you around $4/lb if my math is right from what you posted.........this is a tough one......seeing as how it is your brother and you are looking to advertise, I would do it at cost. Let them know the price will be higher and look to find pork at a better price.........buy it by the case if you can store it.

Also if you think you will sell it, cook 10 butts or so if you ahve the capacity........bag and freeze the pulled and sell that.......that will help lower your cost per pound.

Many ways to get the cost down........use your imagination.

Good luck and don't sell yourself short, but keep in mind whatever the going rate is up there.

Well you could try and google B BQ caters. They will have prices they charge will most likely make ya choke. But people do not mind paying for good food. I went to a class on catering and it was an eye opener. Some of things we was showed we used at a dinner for a veterans raffle we served 200 people with a $500 dollar budget. By what this cater would have charged it would have cost them over 10K. Back to the subject. Check out other caters and set your prices by what you feel is right. There are programs written where all you put in amount of people and what food and it calculates everything for you including your cost.
 
4 packs of 2 = 8 butts in a case. Pork prices are up. I am paying 1.49 a lb case price, 3 weeks ago it was 1.19. 3 weeks from now it will probably be 1.69.

Need oil to raise pigs and cattle, and as long as the oil companies are having their way with us, the folks who need fuel to make a living will have to follow suite.

The cost of your product is relative to the cost of materials, and the amount of time to produce it, and how good it really is, compaired to those who do it for a living legit.( licenses, inspections, insurance, ect.)

From someone who has cooked for a lot of folks, get all you can as it is hard work.

PS: Don't forget the time it takes you to clean up and get ready for the next one. All things considered, you will end up with less than minimum wage if you figure all your hours.
 
Most caterers charge by the person. This can range from $10.00 to $ 20.00 per person and up depending what youâ€[emoji]8482[/emoji]re serving. They also usually supply sides. Do your research at your local markets and find the best prices, figure in all other costs divide by number of guests and multiply by 3 and thatâ€[emoji]8482[/emoji]s your per person price.

Donâ€[emoji]8482[/emoji]t give anyone who work for the health dept. a business card if you are not properly licensed. This is a whole nother thread for the catering forum.
 
Oh yeah.........you have to love it or there would be no reason to do it. Doing a few is a good way to see if your heart is really in it.

Wasn't too long ago that anything over a buck a pound was a rip off. Seems like everything but my income is going up.
