I finally got a spare 12 hours to start my first ever butt. I smoked only twice before, with one good and one not-so-good result with ribs. I started at 0450 and about twelve hours later, I had the most juicy, delicious pulled pork sandwiches I ever had!!!! I rubbed and smoked a 7+ lb butt at 225-240 degrees for about 10.5 hours or so...at the 165 degree mark, I foiled and waited until it hit 199. It rested while I prepared sides. Then it was pullin time, and the meat just fell apart like I never saw before!...I used SoFlaQuer's finishing recipe, and I was in Heaven....Thanks to all who have posted here, I read many of the posts and the forum is a wealth of knowledge...I tried to post pics, but I'm not sure they went through...Thanks, Pete
 
Congrats Pete! What a great feeling, huh? What flavor wood did you use?
That's really cool...thanks for sharing the success story and I believe I can speak for the rest of the gang in this group when I say, "May you have many more successful smokes!".

Thanks, Sam... I used equal amounts of hickory and apple...I can't wait for left overs tonight when I get home from work...Pete

Well done. It took me a few tries to get almost perfect results. Your smoke sounds just about like the proceedure I have stumbled on with the help of the good folks here. Hope you continue to enjoy success.
