Why not, might leave a little stain, but other then that as long as you don't eat the ring it shouldn't hurt anything

What worries me is the copper creating some sort of toxic leaching fume?
 
Not at the temps you'd use for sausage. for what it's worth I've used copper wire to hang stuff in the smoker when I was in a pinch, never notice any ill effects. I guess you could always use butchers twine like we (Well I)  did before we had the rings.

Copper pipes are used so common in household plumbing, a lot of cook ware has a copper clad finish on them, I can't possably see how using copper hog rings could possablyn hurt anyone.

Just my 2 cents worth.
