High Water Jerk Spatchy! NOW with High res Q-VIew!

    Let me tell you so far this smoke has been entertaining!!! I usually have no issues searching a chicken, but tonight in one side I some how was a bit off and ended up cutting the thigh and drum off (only attached by the skin). Not sure how that happened, but it made it really interesting getting it on the grill.

    The "Getting on the grill" is a whole other story. This time of year we get some spectacular thunder storms and along with that some rain that I haven't seen the likes if since living in Hawaii. I had just achieved the Perfect TBS in the Mini-WSM when the $&?! Hit the fan. So out into the rain I went broke back chicken and all!




    That's how much water collected in the 5 minute burst!!

    Sounds like here.  2 inches of rain in 45 minutes....just over Madison on Thursday.  Flooded everywhere....even our pool.

    USED to live in Hawaii!!! But will be back there in a few more years for good! I do have some good photos and will post them!

    We'll it was Fantastic!! I'll post the cook in the morning. Stay tuned , my fiancée made a great slaw with some secret ingredients!!

    Thanks Red, sure was tasty. Wailua Wheat is a seasonal brew from Kona Brewing. Brewed with passion fruit. It's one if my favorites but hard to find.

    Thanks Jeremy! Yep the mini is my go to smoker. It's hard to beat. Super efficient and easy to control, even in a massive thunder storm down pour! For larger cooks the GOSM is still used.

    The nice thing about doing whole chickens and having a small family, there's always leftovers for lunch!

    Thanks Stan. The Mini-WSM really did good considering the conditions. Its proven to be a real work horse. Smokes in wind, rain, snow, sleet, hail, temps below 0* and above 100*!!!
